Do you have to do courses or start from small restaurants? How do you become a chef and get to work in those posh big restaurants?
At first it's culinary school and from then... you have to crab probably every chance to work somewhere. With luck you can get into those big restaurants earlier. Without luck you can totally get yourself to it with time.
But it will take lot's of time.
And no offense, but if you are asking it like this, seems you only want to work in that big posh restaurant, but not really interested cooking in general? Because if you would be really interested, you'd probably already studying and going after this dream :)
Start working entry-level jobs in small restaurants. Learn. Go to culinary school. Work in a top restaurant. Let your sheer talent impress investors who will invest in a restaurant where you will be the chef. How do you become a chef and get to work in those posh big restaurants?
Yah sure, but you have to join a chief course before that, and you can do these courses from foreign too. I think UK is best place from where you can get qualification in these courses.
Culinary school and then start at a lesser known restuarant.
Work your way up the chain from there, attaining references and such.
Get into culinary school, land a small job at a restaurant, and work your way up.
just start small and work to the top- just like you would for any career
