How do you cook potato wedges like restaurants?

I love the homemade (real) fresh cut potato wedges like I have found at some convenience store restaurants. I see them before they go into the hot oil. They look like they have flour on them. I can not figure out if they have been blanched 1st and then coated or how they are cooked perfectly. These are not the kind you find bagged and in your grocery store freezer. Please advice how to get these wonderful potatoes.How do you cook potato wedges like restaurants?
They do have flour on them.



Usually, these kind are fried twice. They're fried once to get them cooked through at a lower temperature, and then frozen and shipped. When they're fried a second time, they're at a higher temperature so they turn golden and warm all the way through.



Most places coat the fries with flour or another seasoning before they're frozen. The flour helps them turn more golden brown.



Another way to do them at home is just what you suspected - blanch the cut potatoes in water until they're just about cooked all the way through, then broil or bake them at a high temperature until golden brown, salt and enjoy



The recipe I found below looks really good.. I may have to try it myself.
BAKED POTATO WEDGES

8 lg. unpeeled baking potatoes, cut in wedges

1 tsp. garlic powder

1/2 tsp. pepper

1/2 c. oil

2 tbsp. grated Parmesan cheese

1/2 tsp. paprika

Combine oil with cheese and seasonings. Arrange potato wedges, cut side down, in baking pan. Brush oil mixture over potatoes. Bake 45 minutes at 375 degrees. Brush mixture over potatoes occasionally as they bake.

SEASONED POTATO WEDGES

1/3 c. flour

1/3 c. grated Parmesan cheese

1 tsp. paprika

3 lg. baking potatoes, cleaned and cut in 8 wedges

1/3 c. milk

1/4 c. butter

In a shallow pan, combine flour, paprika and Parmesan cheese; mix well. Dip potato wedges in milk, coat with flour mixture. Place on a cookie sheet and drizzle with butter. Bake 45-50 minutes at 400 degrees.

POTATO DIP:

16 oz. sour cream

1/2 c. crumbled bacon

2 tbsp. chopped chives

1/2 tsp. garlic powder

Combine ingredients and chill. Dip hot potato wedges or serve over top of wedges.

CRISPY POTATO WEDGES

1/4 c. olive oil

1/2 tsp. salt

1/4 tsp. pepper

1/2 tsp. each basil, thyme, oregano

1/4 tsp. paprika

4 to 6 potatoes, cut in wedges (quarters)

1/2 c. Parmesan cheese

Mix oil and seasonings together. Roll potato wedges in mixture. Lay flat on ungreased baking sheet. Bake at 450 degrees for 15 minutes. Sprinkle Parmesan cheese on potatoes. Bake 15 more minutes. Serve hot.How do you cook potato wedges like restaurants?
Yes, they are covered in seasoned flour. Paprika, garlic, salt, pepper...



To do them at home, I'd suggest you use par-cooked potatoes. This way, the potato is about half-cooked before being fried, and the flour coating doesn't burn before the potato is cooked and no longer starchy.
