You could try Google Maps. Go to http://maps.google.com , then click on "Find Businesses" and enter "Chinese restaurant" in the "What" text field, then "Los Angeles" in the "Where" text field. After you press the "Search Businesses" button, it will show you a map with the locations of different restaurants on the right side, and the addresses and phone numbers on the left side.
If you're on a cell phone, you could also give Google's GOOG-411 a try: Dial 1-800-GOOG-411, then say "Los Angeles, California", then "Chinese restaurants". You can narrow it down by stating an intersection. The computer voice will then start listing restaurants, which you can pick by saying the number. Google can then connect you directly to the restaurant, or you can say :text message" to get a text with address and phone number. The voice prompt is very useful when you're driving.
The best way that I have found is going to MyMenuPages.com and type in the major city that you want info. Then check the food catagory Chinese and it will tell you how many there are in that city. Go to local library and check out phone books in cities of interest and start counting!
