I am new to cooking dry beans. I want to know how to cook black beans the way they do it in mexican restaurants. The spices and everything. Please help.How do I cook black beans the way they do in the Mexican restaurants?
* 2 cups dry black beans, soaked overnight
* 1 onion, chopped
* 1 green bell pepper, chopped
* 5 cloves garlic, chopped
* 2 bay leaves
* 1 tablespoon salt
* 1 teaspoon black pepper
* 1/8 teaspoon ground cayenne pepper
* 1 tablespoon ground cumin
* 1 tablespoon dried oregano
* 1/2 cup white cooking wine
* 1/4 cup distilled white vinegar
* 1/4 cup olive oil
In a medium stockpot, cover beans with water, bring to a boil. Lower temperature to medium low, cover and cook for one hour. Add hot water as needed. The water must be hot to prevent the beans from splitting.
Add onion, green pepper, garlic, bay leaves, salt, pepper, cayenne, cumin and oregano. Boil until beans are tender, about 2 hours total cooking time. Continue to stir and add hot water as necessary so that the beans don't dry out or scorch.
When beans are cooked, stir in wine, vinegar and oil.
Well, I have never had black beans in a Mexican restaurant.
I personally dont like them so i have never maid them.
Are you sure you dont mean pinto beans??? Those I make all the time.

Below is a link to the way the Cubans do it. This is my tried and true recipe I make all the time. You can easily do this in on the stove, but cooking black beans is about like cooking rocks. They take a long time to get soft.
