Why do restaurants have such high turnover rates?

I am planning to become a Culinary arts student and I am told restaurants have the highest turnover rates.Why do restaurants have such high turnover rates?
stressful work-fast paced - pretty much have to work almost always evening/night shift - especially on weekends - no chance for social life - pay probably isn;t that great for the first 20 yrs or so
Depends on the benefits. Some restaurants have people stay there for 30 plus years, due to amazing benefits, and the simple fact they like the job, and this is evident in places that are popular with locals and are unique.



Others, i.e. chains expect to have high turnover simply because its not speicalized food, and everything is strictly prepared.



If you want to stay in one job for years, go to a top notch place in your area. I know of chef that has been in the same place for 15 years since he built the place from the ground up.Why do restaurants have such high turnover rates?
Unstable income (tips), desire to move up (among chefs - no one wants to be a salad chef all their life), instability of the food service economy (60% of restaurants/bars fail in their first 3 years).
