How do you make queso dip, like the Mexican restaurants?

Ingredients

1 cup monterey jack cheese or asadero cheese or chihuahua cheese, shredded fine

4 ounces green chilies

1/4 cup half-and-half

2 tablespoons onions, chopped fine

2 teaspoons ground cumin

1/2 teaspoon salt

1 serrano pepper, chopped fine (optional)

1 tablespoon fresh cilantro, chopped fine (optional)

Directions

1Put all ingredients in a double boiler and heat on medium.

2Cook until melted and well blended, stirring occasionally.

3Serve with fresh tostadas or hot flour tortillas
CHILI CON QUESO (MEXICAN CHEESE DIP)



2/3 stick butter

5 1/2 tbsp. flour

1 1/4 tsp. paprika

1/2 tsp. dry mustard

2 tsp. chili powder

1 1/4 tsp. cumin powder

1 1/2 tbsp. ketchup

1 or 1 1/2 tsp. juice from Jalapeno peppers

1 sm. Jalapeno pepper, chopped finely

3 good shakes garlic powder

8 oz. American cheese, cut in sm. pieces

2 2/3 c. milk (maybe 3 c.)



Cook butter and flour over low heat 1 minute in a double boiler or heavy pan. Add remaining ingredients. Cook over low heat until thick, stirring constantly. Store in refrigerator. Warm before using.



OR



CHILE CON QUESO DIP



1 lb. ground pork

1 (14 1/2 oz.) can Mexican tomatoes, drained

1 sm. Mexican Velveeta cheese

1 sm. can green chiles, diced

1/4 lb. Cheddar cheese, grated

1 onion, diced

1 tbsp. grated garlic

Salsa to taste



Brown pork and onion until brown; drain off grease. Add garlic, drained tomatoes, chilies, cheeses, and salsa; heat until cheeses are melted. Serve in warming dish and keep at low heat. Serve with tortilla chips or crackers.



OR



CHILI CON QUESO DIP



2 cans diced Rotel tomatoes

3 lb. Mexican Velveeta

1 lb. ground beef

1/2 lb. hot breakfast sausage

2 tbsp. hot chili mix

Crock pot or 3 qt. covered casserole (for microwave)



Brown ground beef and sausage, drain grease. Use pastry cutter or fork to mince. Dice cheese into 1-inch chunks. Mix all ingredients. Heat in crock pot until smooth or heat in microwave 10 minutes on high or until smooth. Serve with tostado chips. Makes 8-10 cups dip.

Queso Blanco

* 32 oz Asadero or Queso Quesadilla cubed

* 1/2 cup diced green chiles (if using canned, drain them first)

* 1/2 teaspoon cumin

* 1 tablespoon chile powder

* 1/4 cup onion, finely chopped

* 1 cup crema (sour cream)

* 1 red bell pepper, seeded, diced



Preparation:

Over a double boiler or in a crock pot, stir all ingredients except crema until cheese is melted. Immediately before serving, stir in crema.

Cheap Velveeta and Rotel. Heat to melt.
Google this....Queso Blanco Dipping Sauce. Yummy!!
