When I was a manager of a restaurant at the coast we bought our fish fresh from the small fishermen at the docking jetty.

We paid them Cash for his whole catch, so depending on what he caught, he would set a price for his day's labor.

But what is more important is that most restaurants have a 100% to 150% mark-up on their food.

It really depends on the current rate of the fish and the type of fish that you want. It can change from day to day depending on the availabilty. It also depends on if the fish has been frozen first. Generally a good restaurant will buy fresh fish from a purveyor called a fish monger.How much do restaurants pay for the fish they cook ?
we buy from seafood venders, and pay what ever the current rate is.
