How do I project a new restaurants sales volume?

Lets say I plan to open a new restaurant and want to project my earnings, sales volume, and customer volume by comparing myself to other nearby restaurants, how would I do this? Is there a website that I can go to that provides local restaurants sales data and or customer volume? Any information on this would be greatly appreciated.How do I project a new restaurants sales volume?
find a restaurant similar style and size location, work out takings then deduct costs-food, wages rent electric washing you also allow one off costs like furniture crockery
